Allergen Segregation and Practical Factory Management for Food Suppliers

 

Workshop Overview

 

For sites handling allergenic materials, appropriate allergen identification, risk assessment and segregation systems need to be implemented, understood and maintained to ensure both food safety and brand integrity are protected, from the intake of raw materials through to the despatch of finished products.

 

This 1-day workshop is designed to provide staff with a clear methodology of how to identify, prioritise and manage allergenic cross contamination risks on site and offers applied knowledge of how these contamination risks can be assessed and reduced in a manufacturing environment.

 

Unlike most classroom based courses, this workshop includes suggested segregation best practices which delegates then take in the factory to challenge the robustness of their own factory allergen management systems.

 

The day is delivered via a mixture of workshop based discussions, power point presentations and most importantly, practical exercises, where delegates are expected to apply and discuss their new skills by reviewing actual allergen handling and segregation standards down on the factory floor.

  • General Allergen Awareness

  • Methodology to systematically identify and Risk Assess allergenic materials handled on site.

  • Principles of segregation and best practice applications.

  • Validation and assessment of cleaning standards.

  • Observed factory floor allergen segregation and handling review by the delegates

     

Certification

Assessment of the delegates is ongoing throughout the course. All delegates will receive a certificate of attendance.

Location: on site (factory floor access is required in the afternoon).

 

Price

£975 (+ VAT) plus appropriate consultant expenses. Course cost includes up to 5 delegates. Additional delegates charged at £175 (+ VAT) per person.

Cleaning

Maintaining Effective Cleaning Standards for Food Suppliers

 

Workshop Overview

 

Safe and high quality food can only be produced in clean premises. For this reason, the proper resourcing, management and organisation of cleaning is a basic requirement for the safe production of food.

 

This 1-day workshop is designed to provide your team with a good understanding of how to organise and manage a robust hygiene function. Covering audit expectations of hygiene management systems and their application as well as how to successfully challenge their on-going effectiveness.

 

Unlike most classroom based courses, the focus of this workshop is on demonstrating effective methods to challenge factory standards though practical application.

 

The day is delivered via a mixture of workshop based discussions, power point presentations and most importantly, practical exercises, where delegates are expected to apply and discuss their new skills by reviewing cleaning and inspection standards on equipment on the factory floor.

  • Methodology for robust internal audits of cleaning standards

  • Observed factory floor equipment hygiene review post cleaning by the delegates
